![]() It was kinda good to eat with some hot sauce, but it's not red beans and rice. This recipe just gives you a huge amount of dry, seasoned rice. I then looked at several other recipes, and they're all very liquid, with just an addition of rice at the end. He gave me quite a bit of grief about it, ha. I didn't do any research on what red beans and rice is supposed to look like when my husband requested it (it's saucy!), and went straight to this recipe. ![]() I usually swear by Bon Appetit recipes, but this a fail. We also didn't use bacon, but replaced it with tempeh bacon and 2 Tbsp olive oil which may have contributed to the dryness. Even then may still may need more seasoning. I think next time I would do 1.5 cups of rice and 3.5-4 cups water. We used 2 cups of rice with the same amount of water (4 cups) and was still a little dry. However I think this has potential but like other reviewers said too dry. Not really sure what traditional red beans and rice is supposed to taste like. I made it with my fried pork chops as a nice change from potatoes. This is more a Spanish version and it's delicious. ![]() This is not Creole or Cajun Red Beans and rice. I cooked it on low after I added all the seasoning because I know my stovetop runs hot and I didn’t want everything to dry up and burn. I expected it to come out like the picture, and it did. I put 2 1/2 cup of rice and the 4 cups like it calls for but I'm having to keep adding water and its 2 more extra cups. Adding rice the red beans and rice are totally dry. ![]()
